This is my favourite pancake recipe from Austria. In my house we have these for breakfast, lunch or dinner!
You'll need:
4 eggs, 30 g sugar, a packet of vanillin sugar, a pinch of salt, 375 g milk, 125 g flour, some margarine (don't use butter), icing sugar for decoration.
Start with whipping the egg whites until stiff towers form. Set aside.
Next mix the egg yolks, sugar, vanillin sugar and salt until creamy. Add the milk slowly. Mix well, then slowly add the flour. Into this mixture gently spoon the whipped egg whites until light and fluffy.
Heat margarine in a frying pan and pour in enough dough to fill pan 1/2 cm high. Fry on small heat for approx. 3 minutes or until underside is a light brown colour. Before turning it over heat some margarine again. Fry this pancake side for 3 minutes as well. Use two forks to rip pancake into bite size pieces. Put in preheated oven to keep warm until all dough has been used.
Heat more margarine and fry all the little pieces for approx. two minutes while turning them over regularly.
Finally heap onto a plate, sprinkle liberally with icing sugar to resemble snow covered mountains and enjoy!
